Layered Potatoes (Rakott Krumpli)
- 8 medium potatoes,
- boiled in their skin, peeled and sliced thin.
- 6 hard boiled eggs sliced,
- 1/2 lb. spicy smoked sausage (250 g),
- 1 1/4 cups sour cream (300 mL),
- 1/4 cup milk or buttermilk (50 mL),
- 1 tsp. paprika (5 mL), salt.
Mix sour cream, milk and paprika. Line a large casserole with one layer of potatoes and sprinkle with salt. Follow with a layer
of eggs and sausage. Cover with a little sour cream sauce. Continue until all the ingredients are used up. The top layer
should be potatoes and sour cream. bake covered at 400 F (200 C) for 1 hour. Serve with a fresh lettuce salad.
Variation:
-Some people add layers of cooked cauliflower as well. It is very tasty.
-Try replacing potatoes with boiled cauliflower, brussel sprouts or kohlrabi.
-The sausage can be substituted with chunks of ham, leftover gulash or fried smoked bacon.
